Summer break is wrapping up here in northern Colorado. Students from kindergarten to college will be enjoying their last week of vacation, as school starts next week.

It’s a perfect opportunity to get outdoors, try a new restaurant (hint hint the one below) and hike a new trail before the rhythm of school bells and homework takes over.

The color pink is said to evoke a calm, soothing effect on the body. 

For Nash Pascual, manager at Marcuz Boba Tea Shop & Filipino Restaurant in Fort Collins, it was a no-brainer to splash that color across the walls in her restaurant. Her grandmother’s favorite color was pink, and her house and hair, were often colored in the same hue. This is an ode to her. 

Nearly five months after opening their doors on 130 W. Laurel, the only Filipino restaurant in northern Colorado is showing no signs of slowing down. 

A coffee bar is in the works, they’re working on a liquor license, a karaoke set up and Pascual is teasing something bigger and very close to their location. But it’s not quite ready to be announced. 

“We have a lot more in store”, she said during a recent interview with Scout & Tell. 

But first, the food.

When you’re the only restaurant representing a culture in the area, there can be a weight of expectations on how a dish should taste, especially if you’ve eaten at similar establishment. But for Pascual, their recipes come from Luzon, the main island in the Philippines. Her husband grew up with these recipes and they have been passed down through the family, landing with her and now on the plate of chicken adobo you might eat. 

“This is how we want to represent grandma,” she said.   

Are you unfamiliar with the dishes of a Filipino restaurant? Pascual says you can’t go wrong with two items: The sizzling pork sisig or the chicken adobo. 

Pork sisig is a traditional street food. At Marcuz, they prepare it by finely chopping the protein, searing until crisp, then tossing it with fresh onion, some chili heat and a side of lemon. As for the adobo, they start with a reduction of bay leaves, toasted garlic and soy-vinegar broth. Be prepared for a savory and tangy dish. 

There are no shortcuts when it comes to how their food is prepared. Their sauces are native to the Philippines and cooked the traditional way, bringing authenticity to every single bite. 

To help wash down that deliciousness, Pascual says they’re working on some Filipino coffee, darker than a Sumatra blend, but flowery in notes and pairs quite well with coconut and ube. This coffee has been sporadically available, but until they get a stronger supplier, they’re holding off on an official launch. 

But the hush hush part Pascual hinted is just that, a secret. There are hints and they have talked about it, but the official launch is still TBD. When it does arrive, we can say with certainly; this will be unique to Fort Collins in many ways. 

For now, Pascual says the invitation stands the same as it did when they opened their doors at the end of February. Come hungry, come curious and if something is missing, tell the staff. They carry a servant’s heart. 

“We’re all here for the community”, Pascual said.
